In the simplist form, they're the same. You'll take no damage from either block or evade.

A block is simply a block, an evade though is when they miss due to you moving out of the projectiles path (usually).

You'll see Block pop up whenever you have a shield or a skill that allows you to block (i.e. Aegis).

You'll commonly see Evade when going against someone with projectile attacks/spells (Arrows, Flare, etc.) or a skill like Ward against Melee.

An Evade is not when you move out of the path of the projectile, that's a Dodge (though I've seen Stray come up in similar circumstances as well). Like Blocks, Evades can only be done through skills. Minor difference, but it's good to know whether it was a stance or running that caused your target to get out of the way of your projectile.

Evading and Blocking are essentially the same, they're just two different forms of the same thing - they block/evade ettacks. They are triggered through skills and not through dodging, as Jenosavel said. Different skills do different things whether you block or evade, so take note. For example:

Swift Chop - Axe Attack
If attack hits, you strike for +1-16 damage. If Swift Chop is "Blocked", your target suffers a Deep Wound for 20 seconds and takes 1-16 more damage. Swift Chop cannot be "Evaded".
